🥕 Easy & Healthy Carrot & Egg Gimbap (Gluten-Free, Kid-Friendly, Bento-Perfect!)

What is it?

If you’ve ever seen that famous Korean gimbap at Trader Joe’s, you know it flies off the shelves the moment it gets restocked. But here’s a little secret from our Korean household — we never buy gimbap at the store.

Korean Gimbap Rolls

Why?
Because it’s incredibly easy to make at home, and we get to customize each roll based on what our kids like (which, if you’re a parent, you know is key 🙃). Whether it’s extra eggs for one, no pickles for another, or tuna-mayo for our picky eater — making gimbap at home lets us tailor it perfectly to each child’s taste buds.

And here’s the best part: even if your kids usually turn their noses up at carrots, they’ll eat this version. Lightly sautéing the carrots brings out their natural sweetness, making them mild, soft, and surprisingly kid-approved — especially when paired with egg and warm rice.

This carrot & egg gimbap is our go-to when we need something quick, healthy, and gluten-free. It’s perfect for lunchboxes, after-school snacks, or an easy dinner that looks way fancier than it is.


📦 Ingredients

Roasted seaweed sheets (buy from Amazon)4–5 sheets (gim)
Carrots2 large (julienned)
Eggs4 (beaten and seasoned)
Sesame oil1 tbsp

Roasted sesame seeds1 tsp (optional)

🌟 Optional Add-ins:

  • 🥩 Garlic soy ground beef – savory and satisfying! Just cook ground beef with a little minced garlic, soy sauce, and sugar until browned and slightly caramelized — kids love it.
  • 🦀 Imitation crab – for classic flavor
  • 🐟 Canned tuna mixed with mayo – creamy & kid-approved
  • 🌸 Pickled radish (danmuji) – sweet and tangy pop of yellow
  • 🌿 Blanched spinach – seasoned with sesame oil and salt for extra greens
  • 🥒 Cucumber sticks – for a refreshing crunch

👩‍🍳 Instructions

  1. Prepare rice:
    Mix warm rice with 1 tbsp sesame oil and a pinch of salt. Let it cool slightly.
  2. Sauté carrots:
    Cook julienned carrots in a pan with a little oil and salt until soft (2–3 mins).
  3. Make egg strips:
    Beat eggs and add salt, cook into a thin omelet, and slice into long strips (about 1/2 inch wide).
  4. Set up your seaweed:
    Place a seaweed sheet (shiny side down) on a bamboo mat or clean surface.
  5. Spread the rice:
    Press a thin, even layer of rice over ⅔ of the seaweed sheet, leaving the top edge clear.
  6. Add fillings:
    Lay carrot and egg strips across the middle. Add any optional fillings you like.
    ***I prefer 3 long strips of eggs, and handful of carrots.
  7. Roll tightly (with a Bamboo Roller. And it’s also okay if you don’t have one. The roller only helps to make each roll consistent.):
    Starting from the bottom, roll the gimbap firmly with even pressure after each turn to keep it tight and round.

    ***🌟 TIP: When you reach the top edge, press a few grains of rice along the edge to help seal the roll before completing it.🌟
  8. Slice & finish:
    Brush the roll lightly with sesame oil (if you skip this part, you might not be able to cup them into nice pieces), then slice into bite-size pieces. Sprinkle with sesame seeds.

    ***🌟 TIP: If you’re feeling lazy, you don’t even have to cut them. I sometimes just wrap the whole roll in foil and serve it like a burrito — my kids still love it and it saves time!🌟

🍱 How to Serve

  • Pair it with pickled raddish (optional)
  • You can dip it in mayo or soy sauce!
  • Great for lunchboxes, snacks, or family picnic meals
  • Let kids help roll their own for a fun DIY dinner night!

❄️ Storage & Leftover Tip

  • Fridge: Best enjoyed fresh, but can be stored in an airtight container for up to 24 hours.
  • Tip if gimbap dries out in the fridge:
    Beat an egg, coat each piece of gimbap in the egg wash, and lightly pan-fry until golden.
    It turns into a warm, savory treat — like a mini Korean-style toast roll!

Rice can go bad quickly if it’s not stored properly — especially in warmer temps or humid lunch bags. That’s why I always use a bento box to keep gimbap fresh and safe to eat.
